Singapore throws away around 750,000 tonnes of food waste every year. Most of it starts at home — in the vegetable peels, citrus rinds, prawn shells, coffee grounds, stale bread, and whole bananas we discard before cooking even begins. What if those were the ingredients?

As part of Green-House Festival 2026 — nottofu in partnership with zero-waste concept café Bricolage have turned that question into a 6-course walking menu. Across 6 stations – starters, mains, and desserts – you'll taste what's possible when nothing goes to waste! Each dish comes with a digital recipe card to take home and try yourself. Limited sets available daily.
